01. AH KIAT WANTON MEE – BEDOK 538 MARKET & FOOD CENTRE
Ah Kiat grew up in a small kampung in Ipoh, helping at his mother’s food stall and developing a passion for cooking from young. After coming to Singapore, he trained at a roast meat stall, sharpening his kitchen skills.
He later learned wanton mee under his godmother, the owner of Bai Li Wanton Mee at Blk 538 Bedok North Market and Food Centre. When she retired, she passed the stall to Ah Kiat, who renamed it Ah Kiat Wanton Mee to honour her legacy.
The mee kia is blanched for a nice springy bite and well-coated with soy sauce and sambal chilli. The noodles are flavourful and satisfying, with a gentle lardy richness. Their house-made char siew stands out too — freshly grilled, tender with a slight chew and good fat-to-lean balance.
Regular – $4.50

A small dish of green chilli is provided for those who enjoy a little heat, giving the noodles an extra kick without overpowering the original flavours.
